Why measure the water activity?

Most common quality issues in pharmaceuticals and foods are linked to "free water" in products. The free water influences its microbiological, chemical and enzymatic stability.

A water activity measurement does not measure the content of free water in the sample, but the important information about the status of free water in your product. 

This information is possible to predict which microorganisms will be possible sources of spoilage.

In addition to influencing microbial spoilage, water activity can affect the activity of enzymes and vitamins in foods. 

It also has implication on color, taste and aroma.

Control of water activity is for quality control but also supports new formulations development.
